Easy Creamy Chicken and Dumplings
During the winter, I’m always looking for quick and easy cozy recipes to keep us warm. Chicken and Dumplings is a family favorite and I have the perfect, EASY recipe that’s every bit of delicious + cozy and not at all healthy. Balance right?!
A few ingredients that you probably have on hand, a cooked rotisserie chicken from the grocery store, and a can of biscuits is all you need! So simple!
INGREDIENTS:
1/4 cup butter
1 yellow onion, diced
1/4 cup all-purpose flour
12 oz chicken broth
4 cups heavy cream
10 oz steam in bag mixed veggies
2-3 cups chicken (cooked + shredded}
1 tsp salt
2 tsp pepper
1 tsp onion powder
1 can Pillsbury Grands Southern biscuits
INSTRUCTIONS:
In a large saucepan over medium-high heat, melt butter.
Add diced onions and cook until translucent.
Add the flour to the pot and stir well.
Continue cooking until the flour just starts to turn golden brown.
Add the chicken broth to the pot and stir until mixed well.
Add heavy cream and continue stirring.
Bring the liquid to a boil.
While waiting for the liquid to come to a boil cut the Pillsbury biscuits into quarters. Flatten into “dumplings”
Steam your veggies according to the directions on the bag.
Once the liquid is boiling add veggies, shredded chicken, salt, pepper, and onion powder to pot. Stir well.
Add biscuit dumplings to pot and stir gently.
Cover and reduce heat to medium-low.
Continue cooking for 20 minutes while covered, stirring gently every 5 minutes.
After twenty minutes, check that dumplings are cooked through and stir well.
Serve warm.

ONE CUP PEACH COBBLER
THIS IS SUMMER.
Fresh peaches baked into a sweet + simple base topped with a crunchy sugar crust. It doesn’t get better! Until you top it with creamy vanilla ice cream. Bonus points that it uses simple “one cup” ingredients that you probably have right in your pantry!
QUICK + EASY PEACH COBBLER
Ingredients:
1 cup self rising flour
1 cup sugar
1 cup milk
1 cup melted butter
1 cup (or more) fresh peaches
Directions:
Combine flour and sugar in a large bowl. Add milk and whisk until blended. Add melted butter and whisk. Pour batter into buttered baking dish and top with fresh fruit. Sprinkle a layer of sugar on top. Bake at 350 degrees for 40-45 minutes. (Oven times may vary)
Serve warm topped with a scoop of creamy vanilla ice cream. ENJOY!
